- 8 Lamb leg steaks
- 1 Lemon
- 150ml Red Wine
- 50ml Olive oil
- 2 Cloves of garlic, crushed
- 5 tbsp Fresh parsley
- Salt and pepper to taste

This is a delicious dish for barbecued meat lovers using tasty, tender lamb. I have used a special marinade, which works particularly well, not only with the lamb, but with chicken, too. However, if you wish, you can use a different marinade of your own. The succulent leg of lamb, flavored with red wine and parsley makes an interesting variation to the more usual barbecued beef. For proper meat preparation, we recommend always having a versatile hunting knife at hand so you can make nice clean cuts and preserve the best parts of the meat.
For this recipe, it is important to ensure that the barbecue coals are really hot before popping the steak on the grill, or the meat can become dry and tough. It only takes 10 minutes to prepare the marinade and 12-15 minutes to barbecue and it serves around 8 people. This salad recipe is the perfect accompaniment for a delicious outdoor, or indoor, meal.
Barbecued Lamb

Steps
1 Done | Using a vegetable peeler remove the zest from the lemon and cut it into fine shreds. |
2 Done | Cut the lemon in half and squeeze the juice into a large flat dish. Add half the zest strips and the remaining marinade ingredients and mix well. |
3 Done | After mixing place the lamb steaks in the marinade, ensuring that each steak is well coated. |
4 Done | Cover and marinate in the fridge for at least two hours. |
5 Done | To cook, drain the steak of excess marinade and place over a hot barbecue - 12 minutes for medium and 15 minutes for well done, turning and basting frequently. Sprinkle with chopped parsley and the remaining lemon strips. |
