This is a delicious dish for meat lovers and those who love barbecued dishes. Lamb is eaten almost everywhere around the world. To prepare this dish I have used a special marinade for the lamb, but if you want you can use a different marinade of your own. The succulent leg of lamb, flavored with red wine and parsley makes an interesting variation to the more usual barbecued beef. This marinade also works really well with chicken legs too. While barbecuing the lambs, make sure that the barbecue coals are really hot before adding the steak to the grind, or the meat will become dry and tough giving a bad taste. It took only 10 minutes for me to prepare this marinade and 12-15 minutes to barbecue. This dish will serve around 8 people. It works so well with this salad recipe!

Using a vegetable peeler remove the zest from the lemon and cut it into fine shreds

Cut the lemon in half and squeeze the juice into a large flat dish. Add half the zest strips and the remaining marinade ingredients and mix well.

After mixing place the lamb steaks in the marinade, ensuring that each steak is well coated.

Cover and marinate in the fridge for at least two hours.

To cook, drain the steak of excess marinade and place over a hot barbecue- 12 minutes for medium and 15 minutes for well done, turning and basting frequently. Sprinkle with chopped parsley and the remaining lemon strips.
