Steps
1 Done | Pour the stock into a pan and bring it almost to the boil. Remove any large stalks from the watercress and add the watercress to the pan and simmer gently for 2 to 3 minutes, until tender. |
2 Done | Add the butter and peas to the pan. Increase the heat to medium and simmer for 3-4 minutes, or until the peas become tender (will take around 10 minutes if you are using frozen peas). |
3 Done | Remove the pan from heat and pour the soup into a food processor and process to a smooth puree. |
4 Done | Return the soup to the pan and bring back to boil. Add the milk and stir well. Taste and adjust seasoning. Your delicious creamy pea soup with watercress is ready to be served. |
