Ingredients
- 4lbs Fresh shellfish or clams
- 1-2 Green and red chilies, deseeded and finely chopped
- 3 tbsp Finely chopped garlic
- 1 tsp Finely chopped ginger
- 1 tbsp Finely chopped parsley
- 3 tbsp Olive oil

Fishy Garlic Clams is a simple, but flavorful dish with its own liqueur. Before you start cooking the clams, leave them to soak overnight in cold water. Discard clams with cracked or gaping shells or those which feel too heavy, as they will not be safe to eat. It is alright if any clams open while you’re storing them, but throw out any clams that don’t close when tapped. Shellfish can stay fresh for as long as they can hold water in their shells. Clams also have a lot of health benefits.

Steps
1 Done | Heat the olive oil in a large non-stick frying pan and fry the garlic, ginger and chilies for 2-3 minutes |
2 Done | Pick over the clams and rinse thoroughly. Add the shellfish, turn up the heat and cook for 5-6 minutes. |
3 Done | Turn them with a spoon, so that the ones on top can get to the heat. When they are all open, remove the pan from the heat immediately otherwise they will overcook and get tough. |
4 Done | Finish off with freshly chopped parsley. |
