Mayonnaise, also called mayo, is a thick creamy yellow to white color sauce that is often used in salads, sandwiches and burgers, such as this salmon sandwich recipe. Although most kitchens have a food processor, most of us still reach for the bottled mayonnaise, however mayonnaise is something that is easy, fast and cheap to make at home in just a few minutes. Homemade mayonnaise tastes better than shop bought, but it won’t keep for long so you have to make small batches and use it up soon.

You can add garlic, basil, tomato paste or pickles to this mayonnaise recipe to make flavored mayonnaise. I prefer to use pasteurized egg yolks when making mayonnaise to protect against food poisoning. Enjoy making your own fuss-free mayonnaise with this recipe which yields about 2 cups.

Put the egg yolks, lemon juice and vinegar into a food processor that is fitted with the metal blade.

Add half tsp salt and half tsp pepper.

With the processor running, add the oil in a slow and steady stream through the hole in the cover. If the mayonnaise gets too thick, just add a bit of water.

Now your homemade mayonnaise is ready and will keep for 3 to 4 days in the refrigerator.
