Samosas have been around for centuries, they are a great all-occasion party snack and they are fun to make. Filo pastry is perfect for making samosas, once you’re used to the folding technique you will be amazed to see how quick they are to make. They would go really well with this recipe for red cabbage and tomato slaw.

Samosas have been around for centuries, they are a great all-occasion party snack and they are fun to make. Filo pastry is perfect for making samosas, once you're used to the folding technique you will be amazed to see how quick they are to make. They would go really well with this recipe for red cabbage and tomato slaw.

Heat some butter in a large pan and add the lamb mince. Fry for about 5 to 6 minutes, stirring occasionally until browned.

Stir in the curry paste and cook for 1-2 minutes then season and set aside.

Melt the remaining butter in a pan and cut the pastry sheets in half lengthwise. Brush one strip with butter and place another sheet on top and brush with more butter.

Place a spoonful of lamb in the corner of the pastry strip and fold over to form a triangular shape. Repeat this step for all the cut out strips.

Brush with butter and place in a baking sheet and bake for 15 – 20 minutes till it appears golden and serve.
