Potatoes go well with just about any main course, they work especially well with my barbecued lamb. You can fry, boil or bake them, but they are divine when mashed with some butter and milk to make really creamy mashed potatoes. Peel the potatoes and cut into large chunks.

Place the potato in a pan of salted boiling water and simmer for 15 to 20 minutes until completely tender.

Drain the pan and leave the potatoes over low heat for a couple of minutes, shaking the pan to drive off access moisture.

Remove the potato from the pan and using a potato masher, mash until smooth.

Add the milk, or for a touch of luxury, some cream, and a large pat of butter, before seasoning with salt and black pepper to taste.

Now add the pesto sauce and mix until thoroughly combined.
