Ingredients
- 1 cup Red cabbage, finely shredded against the grain
- 3 tomatoes, cut into wedges
- 1/2 Cup coarsely grated carrots
- 1 Onion thinly sliced
- Extra virgin olive oil
- 2-3tbsp Torn basil leaves or mint leaves
- Freshly ground-black pepper
- 1tbsp White wine vinegar
- Salt to taste
Directions
Red cabbage tomato slaw works well as an accompaniment for the main course. I love salads, and what could be better than some gorgeously sweet and crispy veggies on the side of your favorite rice dish. This slaw is also delicious piled on top of roasted burger patties, or as a light lunch in the office.
This dish is so simple to prepare, it’s really just chopping and slicing so very little preparation time is involved. It takes 15 minutes to prepare or even less if you’re really handy with the chopping. You can make the salad even more colorful with the addition of different colors of tomato, and some white cabbages too. For this salad, I used shredded cabbage. Just cut the cabbage into quarters and remove the hard center. Then turn each quarter on its side and slice thinly lengthwise.
To give the salad a bit of a kick just add some pitted sliced green or red chilies.

Steps
1 Done | Put all the prepared veggies into a large bowl. |
2 Done | Add a dash or two of extra-virgin olive oil and white vinegar. |
3 Done | Mix well while sprinkling the grounded black pepper. Once done, scatter with torn basil or mint leaves and season with salt. Red cabbage tomato slaw is now ready to serve. |
