225g Fresh shrimps

2 bowls Cooked rice

Directions
Stir-fried rice is another easy to make main course. I usually make fried rice with a mixture of vegetables or meat that is leftover in the fridge. For this recipe, I have used shrimps and some vegetables. It’s important that the flavors of the individual ingredients stay separate, so I always stir fry the ingredients separately. If this is your first time deveining shrimp here is a very useful video.

First, de-vein the shrimps then blanch them in boiling water and remove the shell. |

Remove the stalks from the tomatoes and remove the seeds. Rinse and dice the tomatoes. |

Heat 2tbsp of oil in a wok. Stir fry the shrimps for about 30 seconds untouched on one side and do the other side. Remove from wok and place aside. |

Sir fry half portion of diced spring onion until it gets fragrant. Pour in the beaten egg and stir fry until its semi-set. Add the cooked rice and cook until the rice gets hot. |

Add the tomatoes, shelled shrimps and season with salt and mix well. Put in the remaining spring onion and stir fry well. Your stir-fried rice with tomatoes and shrimps is ready to be served. |
