1 tbsp Diced spring onion
2 bowls Cooked rice
3 tbsp Ketchup

Stir Fried Rice With Shrimp

Stir-fried rice is another easy to make main course. I usually make fried rice with a mixture of vegetables or meat that is leftover in the fridge. For this recipe, I have used shrimps and some vegetables. It’s important that the flavors of the individual ingredients stay separate, so I always stir fry the ingredients separately. If this is your first time deveining shrimp here is a very useful video.

First, de-vein the shrimps then blanch them in boiling water and remove the shell.

Remove the stalks from the tomatoes and remove the seeds. Rinse and dice the tomatoes.

Heat 2tbsp of oil in a wok. Stir fry the shrimps for about 30 seconds untouched on one side and do the other side. Remove from wok and place aside.

Sir fry half portion of diced spring onion until it gets fragrant. Pour in the beaten egg and stir fry until its semi-set. Add the cooked rice and cook until the rice gets hot.

Add the tomatoes, shelled shrimps and season with salt and mix well. Put in the remaining spring onion and stir fry well. Your stir-fried rice with tomatoes and shrimps is ready to be served.
